Why we make it this way.

Roasting is the whole point of this one. Tomatoes, chiles, onion and garlic go over heat until the skins blister and char, and that char is where the smoke comes from. It is a middle-of-the-road heat with a lot of depth, which is why it is the safest jar to buy if you are buying for a crowd.

Roasted, not raw

The blistered skins are left in the batch. That is the smoky flavor, and it is the difference between this and a jar off a shelf.

Medium heat, big flavor

Warm rather than punishing. Most people who say they do not like spicy food are fine with this one.

How hot is the Red Roasted, really?

Medium — about a 3 out of 5 on our own scale. It is smoky first and hot second. If you want the heat to be the headline, take the Verde Hot instead.

Is it chunky or smooth?

Chunky. You can see the tomato and the char in it, because we do not run it until it turns into sauce.
