Why we make it this way.

Pork is the tamale everyone knows, which means there is nowhere to hide. Ours is slow-cooked until it shreds, seasoned with chile and spice, and wrapped in masa that stays soft instead of turning to paste. Steamed in the husk, the way it is supposed to be done.

Slow-cooked pork

Cooked down until it pulls apart with a fork, then folded through its own chile sauce. Not a dry filling.

Soft masa

The masa matters as much as the meat. Ours is soft and moist, not dense — that is the part most tamales get wrong.

Freezes beautifully

Buy a dozen, freeze what you do not eat, steam them later. They genuinely taste as good the second time.

How do I reheat tamales?

Steam them — 15 to 20 minutes from chilled, a little longer from frozen, still in the husk. A microwave works in a pinch (wrap in a damp paper towel, 1 to 2 minutes) but steam is better.

Can I buy a single one, or is it dozens only?

You can buy them one at a time at the booth. By the dozen is just the way most people take them home, and it is how our party packs are built.
